Cranberry Walnut Irish Soda Bread

This sweet Cranberry Walnut Irish Soda Bread, almost like a biscuit or a scone, is delicious for breakfast or afternoon tea.

Ingredients
  

Dough
  • 3 ½ cups All-purpose flour
  • ½ cup Granulated white sugar
  • 2 tsp Baking powder
  • 1 tsp Salt
  • ½ tsp Baking soda
  • 2 Eggs
  • 2 cups Sour cream
  • ½ cup Walnuts
  • ½ cup Cranberries
Topping
  • 2 tbsp Milk
  • 2 tbsp Granulated white sugar

Method
 

The Bread
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch springform pan.
  3. In a large bowl, mix together flour, sugar, baking powder, salt, and baking soda.
  4. In a separate bowl, whisk eggs and sour cream until smooth.
  5. Stir wet mixture into dry mixture, then fold in walnuts and cranberries. Do not overmix.
  6. Spoon the dough into the prepared pan.
  7. Baste the top with milk and sprinkle sugar evenly over it.
  8. Bake for 1 hour, or until a toothpick inserted comes out clean.
  9. Let the bread cool in the pan for 10 minutes before slicing.

Notes

Mixing The Dough - Too much mixing will make your bread tough. A good soda bread should have a crusty outside and soft and tender inside. Overmixing releases gluten and makes the bread chewy.
Baking Time - In my oven it took an hour to bake the bread. You may want to watch the bread after 45 minutes just to be on the safe side as ovens can vary. The milk dabbed on top creates a nice brown color. However, if you feel that the crust is getting too brown and the center is not done, create a tent with some foil and cover the top to prevent further browning as the center cooks through.
